Abstract Plant‐based meat is projected to address world‐wide meat shortage and supply–demand imbalances, potentially promoting the growth of sustainable diet choices. Soybean is a key ingredient to produce this alternative food, but the off‐flavours that naturally occur in soy can hinder its widespread acceptance among consumers. This review extensively elaborates on the primary compounds responsible for off‐flavours, their formation mechanisms, and removal techniques. Lipoxygenase oxidation–reduction, oleosins removal, adjustment extrusion conditions, and β‐cyclodextrin treatment were discussed. Fermentation mechanisms, solvent extraction, enzymes hydrolysis, flavouring, and controlling storage conditions were summarised. The most crucial, safe, and effective techniques were enzyme restriction, β‐cyclodextrin treatment in conjugation with phospholipase A2, and modification of the extrusion condition. The reviews provide a systematic summary of the development and prevention methods for the undesirable flavour of soy protein isolate and soy‐based meat products.

In the event of a sudden incident in large buildings, optimizing personnel evacuation paths has a direct and significant impact on overall evacuation efficiency. To address personnel evacuation scenarios caused by building fires in complex environments, this study presents a path planning approach based on the Multi-Objective Gorilla Optimization (MIGTO) algorithm. The objective function comprises path risk, congestion cost, and path length. However, traditional GTO algorithms face limitations in addressing such problems, including slow convergence, premature convergence, and susceptibility to local optima. To address the aforementioned challenges, this study introduces variable updates to the spiral position during the algorithm development phase to improve search efficiency. The nonlinear parameters are adjusted to achieve a harmonious balance between global and local search capabilities. In addition, the alert perturbation mechanism is implemented before each optimization iteration, which improves the algorithm's ability to overcome local optima. Furthermore, a compound chaotic mapping is introduced to increase the diversity of the population. Experimental results demonstrate the outstanding performance of the MIGTO algorithm in various grid map path planning scenarios. Whether faced with complex obstacles, multiple exits, or multiple fire sources, the path inferiority indices of MIGTO in path planning are significantly superior to other algorithms. The MIGTO algorithm is not only suitable for dynamic planning of fire evacuation paths, but can also be used in the Pathfinder evacuation simulation software, where it outperforms the software's built-in algorithms.

Objective To analyze the clinical application and limiting factors of the Hall technique (HT) preformed metal crowns in caries of primary molars and to provide reference for its clinical application based on a questionnaire survey. Materials and methods From June to December 2022, a questionnaire was distributed to pediatric dentists through the WeChat platform using “Questionnaire Star” to analyze the clinical application and influencing factors of the HT preformed metal crowns in caries of primary molars. Results A total of 700 survey questionnaires were distributed, and 650 valid questionnaires were recovered, with a effectiveness rate of 92.86%. In terms of the awareness level of the HT, only 11.08% of pediatric dentists fully understood, while 19.85% of those were completely unaware; In terms of the understanding methods, classes study accounted for 47.60%, and 28.79% of pediatric dentists understood through literature; In terms of the application of the HT, 46.15% of pediatric dentists had applied it, only 11.23% had frequently applied it, and 53.85% had never applied it; In terms of the usage time, the highest proportion was between 1 and 3 years, accounting for 40.33%, and only 9.67% were over 5 years; In terms of the choosing of indications, only 26.62% of pediatric dentists could select indications correctly; Regarding the choice of treatment methods for children who do not cooperate, only 19.54% of pediatric dentists chose the HT. The education background and nature of the workplace had a statistically significant difference in the application of the HT, the number of years of application, the selection of indications, and the choice of treatment methods for children who do not cooperate. Conclusions The survey showed that the awareness level and application frequency of the HT were relatively low in China. The understanding methods mainly learned through classes study. Clinical relevance It is necessary to further promote the development of continuing education projects with the theme of clinical application of the HT and the guidance of clinical operation standards, in order to promote the clinical popularization of it in China.
